Albacore is known as the mildest of tunas. Highly migratory, these handsome silver swimmers grow to be about four feet in length and can travel all the way across the ocean. Albacore is often canned in olive oil and referred to as "white meat" tuna. It is perfect for poaching and tossing with olive and fennel or, when in steak form, searing or grilling to rare.
