A relative of sharks and rays, skate is an elegant and unique fish. Found along the entire east coast of the United States, they were once considered to be useless, but are now prized for their delicate, mild, and sweet fillets. Only the wings of the skate are edible, and each of their two wings produces two fillets. Skate is excellent sauteed, especially with something slightly acidic like capers or tomatoes to compliment the inherent sweetness of the fillet.
